Lemon Balls
This easy no-bake recipe makes a healthy treat that won’t send your blood sugar sky high.
Ingredients | Makes 12 balls:
140 g / 1 cup macadamia nuts
Zest of one lemon
110 g / 1 cup dessicated coconut + extra for coating
1/2 tsp vanilla extract
Pinch of salt
2 Tbsp maple syrup
🥣 Blitz in food processor until just smooth. Shape into balls and roll in coconut (the balls, not you). Firm up in fridge.
🤓 Macadamia nuts are high in heart-healthy monounsaturated fats, antioxidants and flavonoids that can reduce inflammation, and fibre to keep you full and make your gut happy. Coconut is also high in fibre and fat and low in carbs which helps slow digestion and controls blood sugar levels.
